The omakase revolution is headed to Music City. New York-based hospitality group Simplevenue is set to debut its signature high-energy, speakeasy-style sushi lounge, Sushi by Boū, in the Dream Nashville on Thursday, March 6.

With a commitment to merging edomae tradition with modern innovation, the flagship brand offers a 12-course omakase experience, coupled with signature cocktails, imported sake and art deco-inspired environs.

The intimate 1,000-square-foot space will feature a front liquor bar and a 14-seat sushi counter in the rear. Guests will enter through Stateside Kitchen, stepping into a world where the glamour of the Roaring Twenties meets contemporary Japanese minimalism.

The restaurant’s black-and-gold palette, plush emerald seating and velvet barstools mirror Dream Nashville’s art deco aesthetic.

At Sushi by Bou, guests are served a meticulously curated 12-piece omakase tasting menu. The 60-minute dining experience showcases sustainable, high-quality fish such as ikura (salmon roe), gindara (miso cod) and unagi (barbecue eel). For those looking to elevate their meal, the “Boūgie” upgrade extends the tasting menu to 17 courses, featuring five additional seasonal selections.

The restaurant’s culinary program is accompanied by signature cocktails like the Yuzu Honey Bee, Shiso Southsider, Roku Martini, Citrus Highball and the ‘Boū’levard of Broken Dreams.

“With Nashville’s ever-growing culinary scene, we are delighted to bring Sushi by Boū to Music City, offering high-quality sushi crafted by master chefs while offering a unique, high-energy atmosphere course after course,” says Simplevenue founders Michael Sinensky and Erika London. “We are excited to launch our first Nashville location at the Dream Hotel, as it’s the perfect setting to bring the concept to life.”
