Globally inspired Music City eatery etch is opening a second location inside The Factory at Franklin on Oct. 29, featuring a vibrant atmosphere, seasonal menus and culinary offerings helmed by owner and chef Deb Paquette.
As the first woman in Tennessee to qualify as a certified executive chef, Paquette has led the way with sister restaurant concepts etc. and etch, all while mentoring rising talent and whipping up inspired tasty menu inclusions—from Argentinian beef tenderloin to butternut masala grits. Now, the renowned chef and restauranteur is expanding her reach and bringing her award-winning restaurant to Franklin’s dining scene.
“I love the food community in and around Nashville, and opening this second location allows my team and me to grow our network and further share what we love to do, cook and serve,” says chef Deb Paquette, founder and owner of etch. “The people and other businesses involved in breathing new life into The Factory are so cool and creative. I’m so excited to bring this restaurant concept I’ve loved for more than 12 years to Franklin, where we can welcome back current fans of etch and make new friends as well.”

At the new location, Paquette is joined by executive chef Jess Lambert, who will helm the kitchen team and oversee operations, create new seasonal menus and lead sourcing. The staff is rounded out with longtime team members from etch Nashville, including executive pastry chef Megan Williams, general manager Kathlin Harbert and sommelier Dino Cocco.
Located in the former Viking Store and Cooking School inside The Factory, the 4,700-square-foot brick-and-mortar restaurant was designed by the Nashville office of Matheny Goldmon Architecture + Interiors. The space was curated to showcase and emulate the cuisine with vibrant accents, handcrafted lighting fixtures and abundant natural light from The Factory’s original oversize steel windows.
